"In early September, the organic hops we grow on our field 4 miles from the brewery become ready for harvest. Freshly handpicked, the aromas are intoxicating and pair perfectly to our organically grown barley and mixed culture collected from the lees of our family made cider. This year, we split the batch into 3 barrels - red, white and whisky to see how they took on the various characteristics of the oak."
