"Back in the 19th century, strong stock ales were brewed during the autumn & laid down in wood to mature over the winter. These beers would have used local ingredients & would have been assisted in their ageing by the wild yeast that live in the barrel. Our version is made with our own well water, organic Suffolk barley, English organic Goldings hops & aged in wood with a mixed culture of wild yeasts & bacteria. We have used large quantities of whole hops to act as an antiseptic & brewed the beer at the start of the colder British months to give the wild yeast an advantage, just as the brewers did 200 years ago.
